Located in Savigny-lès-Beaune, north of the Côte de Beaune, Domaine Jean-Michel GIBOULOT has 12 hectares of vines in the finest appellations (Beaune 1er Cru, Pommard, Savigny 1er Cru, Savigny-lès-Beaune, Savigny-lès-Beaune 1er Cru, with a majority of Pinot Noir). Jean-Michel is the third Giboulot to run the domaine. Its pretty vineyards, partially planted on the "Montagne de Corton", enjoy excellent exposure to the sun. The vines are organically grown. The youngest plots are pruned according to the "Royat" (cordon) method to better control the vine's vigorous growth, while the others are pruned to the "Guyot" method. The vinification is traditional with little intervention from the winemaker, using stainless steel and wood, and controlled temperatures.
